    Rick Stein arrives in the region of Perigord, famous for black truffles, walnuts and decadent dishes cooked with duck. He discovers his favourite market in the whole of France in the city Perigueux and its historic roots with England as the former Kingdom of Aquitaine. Inspired by his visit, he cooks Enchaud, a traditional pot roast pork from the area, before heading towards the balmy shores of the Mediterranean and the Cote Catalan near the Spanish border.

      蜜蜂為人類的食物傳播花粉,被視為地球上最重要的生物。但牠們正面對生存危機。過去十年,46%蜜蜂品種都錄得數量下跌。提起蜜蜂,大部分人只會想起製蜜糖的蜜蜂。事實上,英國有超過250種蜜蜂,全球更有逾二萬種。製蜜糖的蜜蜂受養蜂人照顧,生計無憂,相反野生蜜蜂就得依賴花粉及花蜜維生。只是自二戰後,98%的野花草原已消失,令野生蜜蜂難以生存。

       

      人類糧食中,有三分一要靠蜜蜂及其他傳播花粉昆蟲提供。蜜蜂生存危機,不單會令人類的鮮果蔬菜供應受影響;薄餅醬、芥茉、焗豆以至朱古力也會出現供應危機。

      修讀昆蟲學的農夫Jimmy Doherty 就希望證明,人類有能力撥亂反正,拯救蜜蜂。Jimmy會用一年時間應對危機。他廣邀一個城市的農夫、市政府規劃人員及居民一同加入拯救蜜蜂行列。由蜜蜂數算開始,Jimmy決定改造空間,旨在將蜜蜂數量在一年內增加一倍。

      This is the epic story of three women who embarked on lifelong journeys to live with humanity’s closest living relatives, the Great Apes. In fact, we are Great Apes too. We share over 96% of our DNA with them because we share a common ancestor millions of years ago.

      The closest cousin is the chimpanzee, followed by the gorilla, and finally by “the person of the forest”, as the majestic orangutan is called in Borneo. We share similar life spans, many behavioural habits and personality traits. Yet half a century ago, we hardly knew anything about them outside of King Kong or Tarzan movies.

      Three young women changed all that, and much more: Jane Goodall left England to live with the chimpanzees of Africa, and became one of the most famous women of our time; American Dian Fossey championed the mountain gorillas of Rwanda and met a tragic end, but made her cause legendary; and Canadian Biruté Galdikas went into the deepest jungles of Borneo to live among the orangutans. They became known as the Trimates, celebrated in National Geographic features and in films.

      Each one crossed the line from pure science to passionate advocacy, and awoke the world’s awareness about the state of the rainforest, and of the whole planet.

In the border town of Uzes, Rick rediscovers his love for salt cod and marvels at the colourful array of French patisserie as he enjoys a seasonal fig tart with his morning coffee. He then heads towards the harbour town of Cassis, not for seafood, but for North African lamb chorba cooked by a local fisherman. In his Provencal kitchen he makes a Confit Tomato and Aubergine Tart Tatin.

    • 無極行 - 婆羅洲黑暗地下坑洞

      婆羅洲中央的桑古利郎半島,有一大片喀斯特石灰岩山,龐大的石灰岩地貌之中有黑暗的坑洞、地下山洞及崎嶇的山峰。這些岩山是蝙蝠、游蛇、燕子及無脊椎動物的獨特居所。

      吉勒喀斯特岩山是桑古利郎最高、而且人跡罕至的岩山。這地區以前崎嶇難行,但自從開闢了一條棕櫚樹公路之後,在叢林內步行兩小時就可到達。由於森林砍伐及開採石灰岩石的威脅已經迫在眉睫,紀錄區內的山洞及動物就變得更加重要。

      東婆羅洲的達雅克人走遍各個山洞,尋找燕窩。他們對區內的地勢瞭如指掌,可幫助探索隊克服險要的地形,前往最有價值的探索點。

      當地的山洞專家片迪博士曾於2004年深入地下坑洞探索。在地下200米,有從未有人踏足過的多層通道。片迪相信這些通道可貫通不同坑洞,探索隊深入這個地下世界,發現驚人的遺跡。

      In the heart of the Sangkulirang Peninsula in Indonesian Borneo lies a series of karst blocks: formidable limestone formations comprising dark sinkholes, underground caves and jagged peaks. These blocks provide a unique habitat for bats, racer snakes, swiftlets and endemic invertebrates.

      The Kulat Karst is the highest and least explored block in Sangkulirang. Previously impenetrable to the outside world, a new palm oil road has now made these caves just a 2-day jungle trek away. With the threat of deforestation and limestone quarrying looming ever closer, it is essential that these caves and the species they support are documented.
