    大衛來到荷蘭,在阿姆斯特丹市中心見識到特別的小食販賣機,更一嚐用剩食製成的地道小吃碎肉腸。大廚莊拿芬.卡帕斯奧以自創的養殖循環系統,證明生產肉類不一定要依賴工廠化的方式,強調不浪費,每一塊肉都能變成精緻佳餚。荷蘭人對肉類需求極大,不得不積極尋求較節省資源的代替品,答案竟是昆蟲料理。全球現已有約20億人會吃草蜢和蠕蟲,大衛將跟隨瓦赫寧根大學教授阿諾.范赫斯勇闖昆蟲實驗室,又會偕同昆蟲料理專家瑪莉安將榖蟲入饌的概念帶到學校,鼓勵小學生吃蟲。

    In the Netherlands, David meets up with Jonathan Karpathios, who has created his own cycle of sustainability and who, with his “nose-to-tail” cooking approach, uses every last bit of the animal. He demonstrates how meat can be produced without factory animal farming, and that every last piece can be used to conjure up a clever, and most of all delicious dish.

    With meat consumption on the rise, David goes looking for alternatives. He encounters an interesting idea at the University of Wageningen. University professor Arnold van Huis heads up an insect laboratory, explaining that two million people worldwide are already getting their nutrition from insects and grasshoppers. David decides to investigate, and together with Marian Peters, a pioneer of insect cuisine, he organizes a test taste to try out her delicious mealworm recipes at the Leonardo School. And wouldn't you know, the children love the insect meatballs!

      When David drives through Bukarest with his car run on used oil, he wonders: what’s Wastecooking doing in the second poorest country of the EU? Food waste however also exists here because the entry of big chain stores has also introduced a barbarism of trash, as David learns in the Parliament of Bukarest. In Transylvania, a grandmother’s knowledge about making use of leftovers is held in high esteem, which self-supporter Gerda gladly demonstrates. Her motto is „do it yourself!“ and David has finally arrived at a place where waste is an alien concept.

      法國貴為高級美食之都,以魚類菜式和海鮮聞名,全歐洲最大的生鮮批發市場倫吉斯市場亦座落於此。但在大衛眼中,這裡正是浪費食物的溫床。他會出席慈善團體開辦的烹飪班,看看法國著名剩食大廚桑妮亞.伊絲古莉安如何善用其他大廚唾棄的沙匐魚,指導低收入家庭吃得便宜又健康。法國每年的漁獲多達80萬噸,很多都被浪費了。大衛會在布列塔尼的聖蓋諾雷漁港參加拍賣會,保育人士海倫.蘿雪將賣不去的鮮魚加工,捐給糧食援助組織,有效處理魚類廢料問題。最後,他會跟隨小漁船出海捕撈小龍蝦,利用一般會被扔回大海的副漁獲,煮一窩魚湯慰勞船員。對抗食物浪費之戰還未完,大衛已準備好迎接新一段旅程。

      Europe's largest agricultural and fish market is located close to Paris, the capital of France. The Rungis market sells food enough to feed 18 million people. Reason enough to suspect food waste on a large scale.

      Sonia Ezgulian demonstrates that fruits and vegetables can be used in their entirety. She provides cooking classes primarily to low income families. Her dishes feature sardines, which are often snubbed by top chefs.

      David travels to Bretagne to get a better understanding of the process. The small fishing village of Guilvinec is taking exemplary measures to combat the waste of aquatic animals. Unsold fish is collected by the organization “Le Panier de la Mer”, processed and donated to food charities. Yet another reason to consume more local produce, and a reminder that big changes can begin on the local level.

      At the end of his journey, our waste cooking chef takes his stove on a fishing boat, to the very source of fish waste. He gets his inspiration from the day’s catch, rescuing too small crayfish and culled fish in order to make a delicious bouillabaisse for the crew. David takes stock with the realization that the fight against food wastes is far from over.

      How can food waste be combated at the highest level? David turns to Belgium and the cafeteria at the European Parliament. The daily leftovers there are weighed in order to gradually reduce the scope of the waste. Nevertheless, several kilos of food still end up in the garbage. David, together with gourmet chef Claude Pohlig, creates a delicious menu for the MEPs from the unsold meals from the previous day. Their waste cuisine is well received, and a debate on how to counteract rising food waste is sparked right at the table. Is this how awareness is raised on the political level? But do theoretical discourses really lead to tangible initiatives? David decides to delve into the issue on the regional level, in a place where all of the supermarkets have been prohibited from throwing away food. He meets Frédéric Daerden, the mayor of Herstal, who initiated this very progressive measure primarily to combat rising poverty in French-speaking Belgium. Afterwards, he invites residents and needy locals to join him in eating a nutritious breakfast at the main town square made with food rescued from a local supermarket.

      旅程由奧地利展開,大衛會跟隨維也納垃圾收集站的員工,往超級市場的垃圾桶翻箱倒籠,竟發現包裝完整的新鮮蔬菜、巧克力、薯片,應有盡有,到底是誰的責任?他又會一嚐維也納國菜炸牛扒的滋味,再用炸牛扒的的油開車前往薩爾斯堡,與超市發言人當面對質。最後聯同頂級大廚湯姆.列達拿,深入屋邨雪櫃搜羅過期廚餘,煮出五道菜宴請住客。

      The journey begins in Austria. Riding along with Viennese garbage men, David rummages in the garbage dumpsters of large supermarkets and is surprised at what all can be found there. With the help of Felicitas Schneider, a garbage researcher at the Vienna University for Agricultural Sciences, he sorts and analyzes his findings: vegetables, chocolate, potato chips packages and fresh fruit -a mountain of food that also provides food for thought. What does food waste look-alike in numbers, and who is responsible for this waste? The retailer, or even the consumer?

       In Salzburg, a press spokesperson for the supermarket chain Spar awaits. She takes David on a tour through Austria's largest retail stores. What do retailers have to say about the issue of food waste? David leaves the supermarket with a shopping cart filled to the brim with food destined for the dumpster and meets gourmet chef Tom Riederer, who provides reinforcements. Tom also accompanies David on a refrigerator safari through the neighboring residential estate. David and Tom are certainly able to collect enough food to whip up a five course menu for the estate residents. Waste cuisine for your average Joe.
