Edible flowers are vibrant, with beautiful and varied appearances. Apart from being used as a garnish, they possess unique flavours that enhance the joy of cooking and the dining experience. In addition to being rich in antioxidants, edible flowers contain natural pigments, such as anthocyanins, which are particularly beneficial for eye health. In this episode, the “Food Fanatics” visit Joey, the owner of a local organic farm, to understand the key techniques and challenges of growing and harvesting edible flowers. They also try the tastes and textures of several varieties, such as crabapple (Malus spectabilis), nasturtium (Tropaeolum majus), borage (Borago officinalis), and marigold (Tagetes erecta), immediately after picking. Chef host Will creates a special dish, “Broccoli and Scallop Gardenscape” bursting with colour and flavour, while teaching us how to preserve edible flowers and offering tips for cooking scallops. Singer-songwriter Catherine WONG also shares her passion for cooking, and consults Dr Kelvin Kam Lung CHONG for eye care tips.
