    Chicken is a food ingredient commonly used in both home-cooked meals and banquets for family and friends. Different parts of chicken vary in mouthfeel and nutritional value. Chicken is rich in protein and unsaturated fatty acids, but it is important to note that chicken skin is high in fat, and skinless chicken is healthier.
    In this episode, the “Food Fanatics” take us to a local farm to see different kinds of local chickens and newborn chicks. The chef host Andy Dark goes to great lengths to put a new spin on this everyday food ingredient, and invited the gourmet Helen TAM and Chinese medicine practitioner Dr CHAN Kam-wa to try out the dish and talk about ways to enjoy chicken.

      How voracious can athletes’ appetite be? How should the Registered Dietitian of Hong Kong Sports Institute (HKSI) design the diet plans so that athletes can have enough to eat? In this episode, “Big Brother” CHEUNG Siu-lun, the former Hong Kong fencing team representative; and Susan CHUNG, the former dietitian of HKSI, are invited to taste the delicious food together and reminisce about the anecdotes between them in those years. The food ingredient featured in this episode, i.e. oyster, is well-known as “the milk in the sea”, and has the highest zinc content among all food. The “Food Fanatic” will visit the oyster farmers in Lau Fau Shan and of course, Chef Will will make delicious dishes for us using local oysters produced in Lau Fau Shan.

      Edible flowers are vibrant, with beautiful and varied appearances. Apart from being used as a garnish, they possess unique flavours that enhance the joy of cooking and the dining experience. In addition to being rich in antioxidants, edible flowers contain natural pigments, such as anthocyanins, which are particularly beneficial for eye health. In this episode, the “Food Fanatics” visit Joey, the owner of a local organic farm, to understand the key techniques and challenges of growing and harvesting edible flowers. They also try the tastes and textures of several varieties, such as crabapple (Malus spectabilis), nasturtium (Tropaeolum majus), borage (Borago officinalis), and marigold (Tagetes erecta), immediately after picking. Chef host Will creates a special dish, “Broccoli and Scallop Gardenscape” bursting with colour and flavour, while teaching us how to preserve edible flowers and offering tips for cooking scallops. Singer-songwriter Catherine WONG also shares her passion for cooking, and consults Dr Kelvin Kam Lung CHONG for eye care tips.

      Ginger is rich in Vitamins A, B and E, and contains gingerols which is anti-inflammatory and antioxidant. From the perspective of Chinese medicine, ginger can help to expel cold and dampness, reduce water retention, as well as relieve stomach discomfort; and its effects are particularly remarkable for women. But is it suitable for women to consume ginger during pregnancy? This episode of “Eat Well Live Well” features ginger, and the two “Food Fanatic” learn about the ginger growing process at the farm first. As winter has come and it’s time for ginger harvest, the “Food Fanatic” also learn the tips for selecting ginger.
      Chef Andy Dark uses ginger to make a dish “Napa Cabbage Pork Rolls with Julienned Ginger”, and Registered Chinese Medicine Practitioner Sofia PANG is invited to taste the food together. Sofia shares the points to note when consuming ginger, saying that ginger has the effect of relieving morning sickness for pregnant women and is a boon to them, but over-consumption is not recommended.

      Hong Kong people love seafood, and fish is a staple in both banquets and home-cooked meals. The cooking methods for fish are diverse, ranging from pan-frying, sautéing, and poaching to, deep-frying, steaming, and even eating it raw. In addition to fish being a source of high-quality protein in fish, the Omega-3 fatty acids in fish oil are anti-inflammatory and help maintain heart health, as well as support children’s brain and eye development. In search of healthier local food ingredients, the “Food Fanatics” visit a modern aquaculture farm in Yung Shue Au. They discover why the founder, Alex, adds Chinese medicine and probiotics to the feed and observe how the humane "Ike Jime" dispatch method is used. The chef host Andy has designed a unique dish, “Mediterranean-style Pan-seared Sea Bass”, teaching us the tips for handling fish bones, as well as the secret of sautéing crispy and tender fish fillets. Singer Deep NG also joins us to share how he encourages his child to be a non-picky eater and how he maintains his voice through diet. Finally, LEE Ka-yan David, Specialist in Paediatrics, learns from Andy how to use a common food ingredient to remove fishy odors.

This time, Chef Will will make a dish “ Honeyed Chicken Wing Dumplings with Honey-Roasted Sweet Potatoes”; and Specialist in Endocrinology, Diabetes and Metabolism Dr Rose TING, and artiste Deon CHEUNG are invited to share their thoughts while enjoying the delicious food. Being middle-aged, Deon CHEUNG is particularly concerned about diet. What health preservation tips does he have? There is a saying amongst the public that honey is a boon to diabetics. Is this true? In this episode of “Eat Well Live Well”, we will unveil the truth about mushrooms! The two “Food Fanatic” visit the organic mushroom farm of Hong Kong. This special mushroom farm was converted from recycled containers, thus allowing for effective control of temperature and humidity. The farm produces some species which are less common in Hong Kong, and the “Food Fanatic” also learn how to pick mushrooms.

      The chef host Andy is good at Western cooking. This time, he will make a Hungarian assorted mushroom soup with different types of mushrooms, and share it with Rheumatologist Dr Carrel YU. Dr YU will explain while eating the causes of gout, the relationship between gout and purine, as well as debunk the myths about purine content in mushrooms amongst the public.
