燒烤作為「火烹法」之一,歷史悠久。老安是西安市長安區花園村村民,為招待老友的到來,他擺起了家宴,並親自上手展示自己的絕活——燒烤。安康一家傳統老菜餐館主廚的絕技是用「油烹法」漲發魚肚。明清年間,閩粵移民遷居陝南,無法獲得海魚,從此,早年無人問津的漢江魚鰾就變得金貴起來。這種因地制宜的改良也促成一道經典陝菜紅燒魚肚的誕生。
