In 1983, Chrstine Cappio went to Paris for her studies. Three years later, she landed in Hong Kong with her future husband, Stephen Cheung Yan-leung, who would later serve President of The Education University of Hong Kong from 2013 to 2023, She quickly fell in love with this vibrant city. In this 2016 interview with Annemarie Evans, she shared her first impressions of Hong Kong, how she learnt to prepare Chinese soup, the challenges she faced while learning Cantonese, and her volunteer work.
